Mexican Chicken Salad with a Honey and Wholegrain Mustard Dressing - Day 6 - 06/01/12

Stuck to my decision and went for a nice simple recipe, Jace was a wee star and helped as well. Note that this recipe is very much to taste or if you are not a fan of spice to leave the chilli's out and 1/2 the mustard content.


Recipe for 2
Ingredients for Salad

  • Chicken (1 large breast)
  • Chilli Pepper ( 1 medium sized)
  • Yellow Pepper
  • Avocado
  • Mixed Lettuce Leaves (2 Handfuls)

Ingredients for Honey and Wholegrain Mustard Dressing
  • White Wine Vinegar (3tbs)
  • Wholegrain Mustard (1tbs)
  • Clear Honey (2tbs)
  • Lime (1/2)
  • Olive Oil (1tbs)
  • Water (2tbs)
  • Pinch of Salt

Method for Salad
  1. Grill Chicken until fully cooked.
  2. Then simply chop everything and mix well.
Method for the Dressing

  1. Add all the ingredients together and stir well.

Nice and simple to through together when busy. Very healthy which is extremely good after yesterdays cake :). The chilli and mustard was a bit too hot for me but Jace loved it so will score the taste separately.

Anyway I better get back to my revision before I start work at Tonik at 9. Oh and p.s the salad mix is great in a sandwich!
