Chocolate and Cream Cake -Day 5 - 05.01.12



So this cake recipe has been used over and over again in my family it is so scrummy and I thought it was be a nice easy one to make as I have done it before. Enjoy :)

Ingredients for Cake

  • 10oz caster sugar
  • 6oz soft-tub margarine
  • 3 eggs
  • 1 tsp vanilla essence
  • 6oz low fat natural yoghurt
  • 8oz self raising flour
  • 2oz cocoa powder
  • 1tsp bicarbonate of soda

Ingredients for the Icing
  • 2oz soft tub margarine
  • 2oz cocoa powder
  • 3 tablespoons of milk
  • 12oz of icing sugar
Also a tub of double cream from the cream filling.

Method for the Cake
  1. Pre heat the oven to 170 degrees Celsius.
  2. Add the eggs, natural yoghurt, cocoa powder and vanilla essence into a bowl and mix well. Then add the flour, sugar and margarine (which I premix) and mix well. Use a hand mixer if available, trying to get as much air into it as possible.
  3. Line a cake tin with greaseproof paper.
  4. Smooth a thin layer of margarine around the cake tin before pouring in the mix to stop it sticking.
  5. Cook for 40-45 minutes.
  6. Once cooked (check by sticking something thing - i.e a chopstick - into the cake and if it comes out with no cake mix stuck to it, it means it is ready.
  7. Leave to cool before cutting in half (horizontally)
  8. Whip up the double cream and spread evenly (thickness of your preference) on one half of the cake, place the other on top.
Method for the Icing

  1. Put the cooker on a low heat and slowly melt the butter.
  2. Add the cocoa powder and continuously stir.
  3. Add the icing sugar 2oz at a time as most of the time I find you do not need it all.
  4. If the icing becomes too thick add the milk.
  5. Once ready pour over the top of the cake and smooth with a spoon.
  6. Then you are ready to get stuck in.
NB - Make sure this is all done on a low heat and that you continuously stir to stop the mixture from burning.

An overall tasty recipe, sometimes I like to decorate with white chocolate drops. Also I am not the biggest chocolate cake fan - although this is very do able - I swap the cocoa powder for half sugar half flour.

Nomnomnom.... this will keep me going for a while (I hope) as I have a tendency to eat more during the exam period ahhhh think I should swap that for going to the gym haha :)
