Tomato, Chicken and Chorizo Penne Pasta - Day 3 - 03/01/12


Luckily the hurricane near the borders did not come near us, although poor Jace left Edinburgh at 12 and still hasn't arrived here (Ardclach) due to all the diversions and traffic. So for this reason, instead of the salmon I had planned I thought I better get a good hearty meal on the go - also Megan isn't a fan of salmon.

Recipe for 4

Ingredients

  • Chicken Breast (3)
  • Spicy Chorizo (Sausage sized)
  • Tikka Curry Powder Medium (1tsp)
  • Garam Masala (1.5 tbs)
  • Olive Oil
  • Garlic (4 Cloves)
  • Penne Pasta (enough for 4 people)
  • Tin of Chopped Tomatoes
Method
  1. Finely dice the chorizo (especially if like my sisters and I you do not usually like the texture)
  2. Finely dice 4 cloves of garlic and mix into the chorizo with olive oil.
  3. Dice the chicken breasts into inch thick chunks. Add the curry powder and 1tbs of garam masala and leave for 10 minutes to let the flavours infuse (I will get there with my cooking lingo)
  4. Bring the pasta to the boil and cook for 12 minutes.
  5. While the pasta is cooking add some oil to a large frying pan and cook the chicken on a low heat for 5 minutes.
  6. Next add the chorizo mixture to the frying pan and also cook for 5 minutes stirring every now and again.
  7. Add the tin of chopped tomatoes and the rest of the garam masala to the frying pan, increase the heat and leave to simmer for 5 minutes. 
  8. Once the pasta has cooked add to the frying pan and mix well.
  9. Split into 4 portions (depending on who eats the most - Jace ;) ) and serve. 
  10. Add salt and pepper to taste.

This recipe was a very quick one to make - under 30 minutes. To spice it up a bit you could add a chili or 2, or to add to your five a day add a yellow pepper. Overall it was a simple, tasty meal the only downfall I would say is that the sauce was not thick enough so next time I would maybe add some tomato puree.

This is one that I will make again especially because my dad enjoyed it (the spoonful he had before he went out for dinner).
