Ginger and Garlic Baked Mackerel with Creamy Mash and Steamed Veg - Day 2 - 02/01/12

So as per usual after the festivities there is a lot of food left over in our household that my mum wants used up. So the only ingredient that I needed to get today was 2 limes (Saving the pennies and all that).

Recipe for 4

Ingredients for the Mackerel 

  • Mackerel fillets (6)
  • Olive oil
  • Garlic (5 cloves)
  • Ginger (2 inch cubed roughly)
  • Capers (1 tbs)
  • Dried Basil (1/2 tsp)
  • Lime
 Ingredients for Mash
  • Potatoes (6 tennis ball sized)
  • Philadelphia (or soft cheese) 1/3 a tub
  • Coriander (handful)
  • salt and pepper to taste
  • double cream (50 mL)
Ingredients for Vegetables
  • Carrots (2)
  • Broccoli ( 2 pieces each)
  • Lime
Method
  1. Pre-heat oven to 180 degrees Celsius
  2. Finely chop the garlic, ginger and capers and mix with the olive oil and lime juice. Mix well and add the dried basil.
  3. Spread mixture evenly over the mackerel fillets, cover in tin foil and leave to marinate for 20 minutes.
  4. While the mackerel is marinating, peel and wash the potatoes and have them in a pan of water ready to be boiled.
  5. Finely chop the coriander and mix well with the Philadelphia and cream into a bowl.
  6. Prepare the carrots and broccoli and place in an oven steamer (plastic dish with an inner dish with holes in it) put cm of water in the bottom of the dish and add the juice of a lime.
  7. Bake the mackerel for 25 minutes in the oven.
  8. Boil the potatoes for 20 mins and steam the vegetables for 8 minutes.
  9. Once the potatoes are ready mash with the Philadelphia mixture and add salt and pepper to taste.
  10. Once everything is ready split into four portions and serve.

This recipe was easy enough to make and for people who are not so keen on fish (my sister Megan) the marinade makes a big difference to the flavour - Megan ate every last bit. The mash potato was not so mundane with Philadelphia and coriander mixed through and the lime in the water of the veg allowed a little twist to your simple veg dish. All in all a nice meal that the family were happy with and that I would make again.
