Tomato and Pepper Bruschetta - Day 1 - 01.01.12

Well firstly HAPPY NEW YEAR everyone :)


This was just a really simple starting recipe for the new year as we always have so much food at my Nanny's anyway. This recipe was thrown together by me when I needed to make Jace a quick snack before he went to work.


Recipe 


Ingredients
  • French Bread stick
  • Olive oil (enough to cover small pan)
  • Garlic - 3 cloves
  • Ginger - roughly an inch cubed
  • Chili - 2 large red
  • Lime
  • Cherry Tomatoes
  • Red Pepper
  • Feta Cheese
  • Coriander
Method
  1. Chop up the red pepper and cherry tomatoes into a large bowl. 
  2. Squeeze the lime into the tomato and pepper mixture.
  3. Finely chop a handful of coriander and add to the mixture.
  4. Finely chop Garlic, Ginger and Chili's and gently simmer in the olive oil for 5 minutes (don't allow to         brown)
  5. Cut the french bread diagonally into inch thick slices. Lightly toast one side under the grill before turning over - brush a layer of the olive oil mix over the bread before toasting until crisp.
  6. Add the rest of the olive oil mix to the tomatoes and pepper and mix well.
  7. Crumble feta cheese into a dish so people can add if they want.

Usually I would of served them already made up, but in this case I put all the different ingredients such as the bread, feta cheese, chili's and tomato and pepper mix in separate bowls for everyone to help themselves.

This recipe was really tasty and went down a treat with everyone, the help yourself layout was good as not everyone was keen on chili's/ feta. The left over juices in the bowl were used as a salad dressing and this worked really well.
