Lime and Chilli Grilled Chicken with Strawberry and Avocado Salsa - Day 7 - 07/01/12

After 2 attempts at trying to post this, here it is! (if anyone feels generous and wants to give me a new working laptop - feel free :) haha )


Had avocado and lettuce leaves left from yesterday so decided to pick a recipe that contained them both - waste not want not and all that. This recipe was very healthy and extremely tasty. Also was made at a bargain price as Tesco's had over stocked so had all their veg and potatoes for 95% of...BARGAIN the only thing that was payed for full price was the chicken!



Recipe for 2


Ingredients for Marinade

  • Olive Oil (3tbs)
  • Lime 
  • Clear Honey (1tbs)
  • Chilli Powder (1tsp)
  • Garlic (1 clove finely chopped)
  • Chilli (1 finely chopped)
  • Coriander (1/2 handful finely chopped)
  • Pinch of Salt

Ingredients for Salsa
  • Avocado 
  • Strawberries (3 large)
  • Coriander (few leaves torn)
  • Lime (1/2)
  • Chilli Powder (tsp)
  • Pinch of salt

Main Ingredients
  • Chicken Breast (2)
  • Salad Leaves (Handful)
  • Potatoes (New potatoes with butter and herbs from tesco)

Method for Marinade
  1. Finely chop chilli, coriander and garlic.
  2. Mix all ingredients well.
Method for Salsa
  1. Chop avocado and strawberries into cm cubes.
  2. Put all ingredients into a bowl and mix well.
Method for Chicken
  1. 3 tbs of your marinade rubbed into the chicken, cover and put in the fridge for 15mins.
  2. Grill the chicken until cooked.
Method for Potatoes
  1. Follow instructions on packet.
Method for Plating Up
  1. Place the grilled chicken on a bed of mixed leaves.
  2. Add the salsa and potatoes.
  3. Cover the chicken with the remainder of your marinade.
  4. Add a wedge of lime.

Such a nice recipe, was a bit sceptical when I seen that it included strawberries but they are not over-powering in the slightest. Very healthy and filling at the same time.
